1、因空气潮湿，菜板很容易生霉，所以每次用完菜板，应用洁布擦净，将其立放置在通风处晾干。或者把竹砧板放在一个像碗类的器皿上或者砧板架，接触面小但同时还能支撑住砧板。这样砧板就不会发霉了。

2、如果因为木质的砧板易于渗透发霉较厉害的话，就要用刨子刨下一小层才行。清除了霉点的砧板都要用水冲洗干净再用。而用水洗或者煮，会减少霉点，但是都不会彻底清除掉霉点，还有用盐水清洗也是非常有效。

3、若菜板已生老霉，可将菜板放在淘米水中或放洗涤剂等擦洗，然后用清水洗干净，立放在通风处晾干即可，但不要轻易将湿菜板放在阳光下面曝晒，以防其变形，而影响使用。

4、洗烫法，用硬刷和清水将菜板刷洗一遍，病菌可减少三分之一，若再用沸水烫一遍，残存的病菌就很少了。

5、每次使用菜板后，将菜板上的残渣余汁刮净，并保持每周往菜板上撒一次盐；

6、紫外线消毒，把菜板放在阳光下暴晒30分钟以上（这种方式要格外注意，因为过度暴晒会使砧板开裂）。
